Potato Salad Recipe

Ingredients Six medium russet potatoes Four  large eggs Quarter cup diced onions One cup Hellman's mayonnaise Quarter Cup Yellow Mustard Half teaspoon salt half teaspoon paprika One teaspoon pepper Half cup sweet relish

Boil potatoes until tender. Check by sticking with a fork. The fork should easily penetrate the potato. I peel first but some people (my wife) peels them after boiling the potatoes.

Hard boil the eggs. I boil for a full ten minutes. I do not want soft eggs in my salad

Cube the potatoes

Chop the eggs

Mix all ingredients except for the paprika in large bowl. Thoroughly blend potato salad.

I taste it several times and adjust to my liking. It's a great excuse to eat the potato salad before everyone else gets a chance.

Transfer potato salad to serving dish and sprinkle top with paprika

Catfish ,Potato Salad and hush puppies are great combination.
