32 jumbo (under-16 count) shrimp 1-cup zesty Italian salad dressing 2 cans (4.5 oz or fresh equivalent) jumbo lump crab meat 10 oz soft cheese (havarti, brie, goat, feta, etc.) 1/2 cup finely chopped chives or scallions 1/2 cup bread crumbs (fresh. stale, seasoned, un-seasoned whatever) Dash hot sauce Salt Pepper Six cans beer or wine or brown/ white liquor with favorite mix Serves four
Open can of beer or pour a large drink, Peel, de- vein, butterfly & pat dry shrimp (these can also be called scrimps if you are southern) make sure that you are consuming enough of your drink while this process is happening as dehydration can ruin your appetite. Put scrimps in 1 gallon zip-lock bag with salad dressing & place in frig for at least 1 hour maybe 2 Consume more drinks until half marinade time is up and then Prepare the following; Put cheese & scallion/chives in bowl mix until well blended & add salt, pepper &hot sauce to taste, (please continue to consume dehydration preventative) Fold in crabmeat gently until well blended Remove scrimps from marinade and pat dry Stuff shrimp with cheese mixture and top with light dusting of breadcrumbs Seal closed with toothpicks Put on grill or under broiler & cook until scrimps are pink and topping is golden brown Remove from heat, wait until the next round is poured and serve, This recipe can also be an entree if you drink enough
