Swiss Steak

It is a lengthy process to cook swiss steak but well worth the effort Swiss steak is one of the best meals you will ever taste. It is fairly easy but also impressive to guests.
Tenderize steak by pounding with a meat tenderizing hammer. Mix flour with mustard. Sprinkle flour mixture over steak and pound it again with meat hammer. Heat oil in a large, heavy frying pan over medium to high heat. add steak and cook, turning once, until browned on both sides. Transfer it to a shallow baking pan. Mix tomatoes and their liquid, onions, celery, Worcestershire, pepper and sugar in a bowl stir thouroghly.
Pour over browned meat soon to be Swiss steak. Cover and bake at 350 degrees until meat is tender when pierced, at least 2 hours. If in doubt cook longer. Makes 4 servings.
